Ingredients

1lb chicken breast boneless, skinless
1 package frozen broccoli, broken apart
1 can lower-sodium cream of mushroom soup
3 T fat-free mayo
1 cup reduced fat shredded cheddar cheese
Tips
Directions
Boil chicken breast until done and drain. When cool enough to handle, cut into 1-inch pieces. In a square or round casserole dish, mix mayo and soup. Add broccoli and chicken and mix well. Sprinkle with cheese. Bake at 350 for 20 minutes or until cheese is melted. Serves 4.

Great, easy, tasty recipe! I don't eat carbs for the evening meal and have a hard time finding meals that are easy, tasty, and filling--this totally fits the bill! I used lowfat cream of chicken and fresh steamed broccoli, and added onion and parsley to the water when boiling the chicken. New fave! - 2/12/08

Boiling Chicken will never cease to confuse me. lol.
Now, BROIL or bake the chicken and you are adding some grilled flavor, boil it and you are just making rubber cubes. That being said, this recipe (minus boiling the chicken) was super easy and yummy and just what I needed on a cold snowy day. :) - 2/3/11

This was a quick, easy and filling idea for dinner. I used precooked chicken and substituted fat-free sour cream for the mayo (it was what I had on hand.) It was a tad bland for me, so I may add some spices next time, but it's a great time-saver to add to my weekly rotation. Thanks for the idea. - 11/14/08

I enjoyed this. I made the recipe to the letter, & cooked brown rice on the side to add to it (love me some starch!) Very easy to make and I'm sure I'll be making it again. Quick for an after work meal (my fiance thought it was bland so I added pepper, garlic powder, & a dash of onion powder to his) - 11/10/10

After reading many of the reviews, I mixed the cheddar cheese in with everything rather than put it on top and I tried sprinkling bit of bread crumbs on top. This was hearty and delicious. My husband rates it 4 stars, I rate it 3 because it needs "something", what, I don't know. It was good though - 1/9/11

I thought this was pretty good. I added some seasonings. I mixed the cheese in and spread some panko over the top. I will try to make sure to mix it much better before I put it in the oven next time. My husband and 4.5 year old really liked it too. I have a good young son that like broccoli. - 2/3/11
