Hearty Chicken Veggie and Quinoa Soup

Introduction

I was looking for a way to cook quinoa that would prove tasteful, so I whipped up this crock pot concoction and it came out delicious and filling. You can change serving sizes to suit your needs. Number of Servings: 6

Ingredients

    3 large chicken breasts
    1 1/4 c quinoa
    100 grams onions, chopped
    75 grams celery, chopped
    50 grams carrots, peeled and sliced
    3 oz fresh sugar snap peas, chopped
    1 1/2 c spinach, chopped
    2 cans chicken broth
    1 can water
    Celestial Seasonings 7 pepper jamboree, or preferred seasoning.

Directions

cut excess fat and skin off chicken breast, then cut chicken into strips. Coat with 7 pepper jamboree or preferred seasoning. Place in crockpot. Chop all vegetables to liking and pour over chicken. Put all 4 cups of broth in and add 1 can water. Cook on high for 5-6 hours or until chicken shows doneness. Place uncooked quinoa into crock and let cook for an additional half hour. Spoon into individual dishes and freeze for quick hearty meals later, or feed a small army. Makes 6 2-cup servings, but sizes can be adjusted to suit dietary needs.
