Vegetarian Chicken, Spinach, Strawberry Salad

Introduction

Number of Servings: 1

Ingredients

    * Romaine Lettuce (salad), 1 cup, shredded
    * Spinach, fresh, 1 cup (remove)
    * Carrots, raw, .25 cup, strips or slices
    * Strawberries, fresh, .5 cup, sliced (remove)
    * Mushrooms, fresh, .5 cup, pieces or slices
    * Red Ripe Tomatoes, 1 cup, chopped or sliced
    * Red onion, 10 rings cut in half
    * Morningstar Farms Chik Patties, Original, 1 serving, cut in half then in 1/4 inch strips
    * Jams, preserves, jelly, 1 tbsp
    * Lime Juice, .5 lime yields or 2 tbsp. lime juice concentrate
    * Olive Oil, 1.5 tbsp
    * Pepper, black, 1 dash


Directions

Add lettuce, spinach, shredded carrots, sliced mushrooms, red onion, and tomatoes to serving dish.

Warm Morningstar Farms Chik Pattie using packaging instructions.Cut patty in half then in 1/4 inch strips and spread over salad mixture.

To make strawberry-lime dressing add olive oil to small bowl. Next add lime juice, strawberry jam, and pepper to the bowl and whisk until well mixed.

Pour dressing over salad and chicken and serve.

Yields 1 dinner size salad or two smaller sized salad. Nutrition information is for one dinner salad.
