1 bunch bok choy
1.5 c shredded carrots
1 c cubed eggplant
.25 c stir fry sauce
2 T soy sauce
2 c brown rice
While tofu is cooking, add all chopped vegetables into a pan and cook with stir fry and soy sauces until thoroughly cooked.
Serve vegetables over .5 c rice and top with .25 of the tofu.
