Number of Servings: 14

Ingredients

    3 onions, sliced
    1lb carrots, sliced (1/2in slices)
    2 lb potatoes, cubed large
    2 bay leaves
    6 cloves garlic, chopped
    1T fresh thyme, or
    1t dried thyme
    1/2 t pepper
    2T quick cooking tapioca
    1 to 1-1/2 lbs beef stew meat, cubed
    1 can beef broth (14.5oz) or 1 beef bouillon cube w/cup water
    1 can 12oz beer

Directions

Place onions, carrots, potatoes, garlic bay leaves, dried thyme, and pepper in crock pot, in that order. Sprinkle with tapioca. Place meat cubes on top of vegetables, add beef broth and beer.
Cover, cook on low 10-12 hours on low (5-6hrs on high). If using fresh thyme, stir into soup before serving.
Makes 14.5 Cups stew; 1serv=1Cup
