Number of Servings: 6

Ingredients

    Kraft Minute Whole Grain Brown Rice, 2 cup
    Canola or Olive Oil, .5 1tsp
    Onions, raw, .5 cup, chopped
    Curry powder, 1.5 to 2 tsp
    Cumin seed, .5 tsp
    Cardamon, .5 tsp
    Water, 1.75 cups
    Kippered Herring, 10-12 oz, flaked
    Peas, frozen, 1 cup
    Hard Boiled Egg, 3 large
    Parsley, .5 cup
    Lemon Wedges and mango chutney for serving

Directions

Heat heavy 3-quart dutch oven or large deep skillet over medium-high heat. Add the rice and toast until aromatic, stirring frequently, about 3 minutes.
Reduce heat to medium. Push the rice aside and pour oil on the empty side of pot. Stir in the onion and curry and heat for about 10 seconds while stirring.
Gradually add water and the fish. cover and cook over medium heat for 5 minutes.
Stir in peas. Turn off heat. Cover and let sit for 5 minutes.
Mix in the eggs and parsley. Season to taste with salt and pepper. Serve with lemon wedges and mango chutney.

Notes: Can use smoked trout, smoked makerel, or smoked salmon in place of the herring.
