Fiber Chocolate Muffins

Introduction

This is an adaptation of a recipe using a brownie mix. I did not have a mix and wanted to try the recipe, so made the brownie base from scratch and then added the yogurt, pumpkin,baking soda, oat bran and changed half of the oat bran to fiber one ground. Ingredients

    Fiber One Yogurt, 113 gram(s) - One container
    Pumpkin, canned, 1 cup
    Baking Soda, 2 tsp
    Oat Bran, 1 cup
    Fiber One Cereal, 1 cup (ground into a flour)

    For Brownie Mix:
    Whole Wheat Flour, 0.25 cup
    Oat Bran, .25 cup
    Cocoa, dry powder, unsweetened, 3 tbsp
    Baking Powder, .5 tsp
    Baking Soda, .5 tsp
    Cinnamon, ground, .5 tsp
    Salt, .25 tsp
    Stevia Sweetleaf Plus, 4 packets

Directions

Mix all ingredients by hand. Divide equally into a sprayed muffin tin. Bake at 350 for 18 minutes.
Makes 12 good sized muffins. The batter is quite thick due to the fiber content
