Roasted Veggie Omelets

Introduction

Ingredients

    2 medium red potatoes, diced
    1 cup whole fresh mushrooms, quartered
    1/3 cup chopped zucchini
    1/4 cup chopped red pepper
    1/4 cup chopped green pepper
    1 Tbsp Extra Virgin Olive Oil
    1/2 tsp dill weed
    1/4 tsp salt
    1/4 tsp pepper
    3 large eggs
    6 large egg whites
    6 Tbsp nonfat milk
    1/4 tsp Tabasco sauce
    2 oz shredded part-skim mozzarella cheese

Directions

Place the potatoes, mushrooms, zucchini and peppers in a greased 15x10x1 in backing pan. Drizzle EVOO over vegetables, add dill, salt and pepper; toss gently to coat. Bake, uncovered, at 450 degrees for 20-25 mintes or until tender.
In a small skillet, spray with cooking spray and set over medium high heat. In a small bowl, whish eggs, milk and Tabasco sauce. Pour 1/2 cup egg mixture into skillet. As eggs set, push cooked edges toward the center, leting uncooked portion flow underneath.
When the eggs are set, spoon about 3/4 cup vegetable mixture over one side and sprinkle with 1/3 of the cheese; fold other side over filling. Let cook another minute until cheese starts to melt and then put on a plate to serve. Repeat 2 more times by respraying the pan and continuing from there.

Makes 3 omelets.
