Cracker Salad

Introduction

An old recipe that my family begs for! Tastes like potato salad, and if not told, no one knows the difference. Yummy. An old recipe that my family begs for! Tastes like potato salad, and if not told, no one knows the difference. Yummy.
Number of Servings: 6

Ingredients

    1 sleeve saltine crackers, crumbled
    1/2 cup green pepper, chopped
    1/2 cup celery, chopped
    1/2 cup onion, chopped
    1/2 cup sweet pickle cubes
    3 eggs, boiled and chopped
    1 cup mayonaise
    Bit of sugar (about 1 tablespoon)

Directions

Mix all ingredients together, and chill overnight for the best flavor. (Take from fridge about an hour before serving.)

Serves 6

(I usually double for my family, as they like it so much, and there is never any left over.)

  • Now I've heard everything! I can't wait to try this. This recipe must have originated in the south and never made it via wagon train to the West Coast! Sounds wonderful Jean! I will spring it on my family and not tell them what it is. I will use low calorie mayonaise and probably a sugar substitute, - 4/14/09
