Passover Carrots

Number of Servings: 4

Ingredients

    Carrots
    Orange Juice
    Chicken Stock
    Honey
    Turmeric
    Salt Papper
    Fresh Ginger
    Olive oil or vegetable oil

Directions

Cut 2 pounds carrots in diagonal pieces about 1 1/2 in. thick

Sautee carrots in 2-3 tbsp olive oil until beginning to soften about 3 min., add 1 tsp. turmeric and 2 tsp julienned fresh ginger (1/2 tsp ginger powder if fresh is unavailable)

Add 1/3 - 1/2 cup orange juice and 2-3 tbsp honey, let cook over moderate heat stirring occasionally until reduced to a glaze approx 2-3 min.

Season with salt and pepper to taste

Add 1/2 cup chicken stock and let sauce reduce to desired thickness, adjust seasonings to taste

Yields 4 servings.
