Super Low Fat Moroccan Chicken

Introduction

There are a few great Moroccan Chicken recipes on the site, but none were "trimmed down" enough for me! Still just as tasty, with less sodium, calories and fat! Number of Servings: 4

Ingredients

    * 4 - 4oz Chicken Breasts
    * 1 tbsp Extra Light Olive Oil (or a good sized spray)
    * 1 tsp Cumin seed
    * 1 tsp Turmeric, ground
    * 1 tsp Coriander seed
    * 1 tsp ground Ginger
    * Dash of Pepper, red or cayenne to taste
    * 1/4 cup Low Sodium Vegetable Broth, 1 cup, .25 serving
    * 2 tbsp Cranberries, dried, sweetened (craisins)
    * Onions, raw, 1 medium chopped
    * 1/2 cup Del Monte Diced Tomatoes, No Salt Added

Directions

brown chicken in oil
add onion and garlic..cook till soft
add remaining spices stir for 1 min
add remainder of ingredients...cook til done about 10 min covered

Great served with the Vegan Moroccan Chickpeas recipe and couscous!

  • This was pretty darn good! I didn't use the coriander since I'm not a big fan (and didn't have any) and I was hesitant of the craisins - but they really do add to this dish. - 7/18/09
