Introduction

This is Almond Bread for the Specific Carbohydrate Diet. I cannot eat gluten or sugar so this is my sandwich bread and it is great. This is Almond Bread for the Specific Carbohydrate Diet. I cannot eat gluten or sugar so this is my sandwich bread and it is great.
Number of Servings: 18

Ingredients

    Almond Meal 2.5 cups
    3 large eggs
    1 cup dry curd cottage cheese (packed)
    1/4 butter (melted)
    1 tsp. baking soda
    1/2 tsp salt

Directions

Mix all ingredients in a Food Processor. The butter should be melted when added to the mix. Line a 9x 5 loaf pan with parchment paper. Bake in oven at 350 F for 1 hour. Slice thinly - it holds together nicely.
