Romaine Lettuce - 3 cups (or sub in your favourite salad greens)
Salsa - . 1/4 cup (or to taste)
Cilantro (optional) 1 tbsp
Parsely (optional) 1 tbsp
Pinto Beans (drained and rinsed) - 1/2 Cup (or sub in your favourite beans... black beans are also good)
Carrots (shredded) - 1/4 Cup
Corn Kernels - 1/4 cup
Mix together the pinto beans, corn, salsa and top the salad.
Makes a nice quick lunch for one!
