Nanny's Broccoli Pasta

Introduction

An adaptation of my Scilian Grandmother's recipe An adaptation of my Scilian Grandmother's recipe
Number of Servings: 2

Ingredients

    10 cloves of garlic
    3 cups of fresh broccoili, chopped
    2 tsp olive oil
    2 cups Organic low sodium vegetable broth
    1 TBS oregano
    salt and pepper to taste
    2 oz Barilla Plus Rotini
    Grated Parmesan cheese

Directions

1. Put large pot of water on to boil for pasta.
2. Mince Garlic.
3. Add olive oil to a large saute pan, heat over medium high flame and add garlic.
3. Saute for a minute then add broccoli, oregano, salt and pepper and vegetable broth. Cook over medium high high for one to two minutes, stirring. Cover and lower heat to simmer.
4. Cook pasta acording to directions. When done add to the broccoli mixture and toss. Taste and adjust seasonings.
5. Serve with lots of fresh parmesan cheese.
2 Servings.
