Barbecue Chicken Salad

Introduction

This salad is amazing - really flavorful, cool, and very satisfying. All the flavors of a great barbeque in one simple, convenient salad! Plus, it's very high in protein and fiber and has fewer than 10g of fat per serving. This salad is amazing - really flavorful, cool, and very satisfying. All the flavors of a great barbeque in one simple, convenient salad! Plus, it's very high in protein and fiber and has fewer than 10g of fat per serving.

Ingredients

    2 cooked boneless skinless chicken breasts, cubed
    1/4 c. Hidden Valley Light Ranch Dressing
    1/4 c. barbeque sauce (if spicy, omit hot sauce)
    dash hot sauce
    squirt fresh lime juice
    1 c. canned black beans, drained and rinsed
    1 c. canned sweet corn nibblets
    1 Roma tomato, chopped
    1/2 Haas avocado, diced
    chopped fresh cilantro, to taste

Directions

1. Mix all ingredients together except avocado and cilantro, being careful not to mash black beans. Salad will turn a nice spicy orangey color. If possible, let sit in refrigerator overnight.

2. Just before serving, sprinkle with chopped cilantro and diced avocado. Serve with crackers, baked tortilla chips, or on a bed of romaine lettuce. A meal all by itself!
