Carla's Pasta Salad

Introduction

1 serving = about 1 cup 1 serving = about 1 cup
Number of Servings: 12

Ingredients

    box (14 oz) Barilla Plus Rotini (or any Barilla Plus pasta shape)

    2 1/3 c. frozen peas
    2 cups diced carrots
    1 can small black olives
    1 cup diced celery

    Salt and pepper to taste. Can add Cayenne pepper for a spicy flavor too!

Directions

Boil pasta according to directions.

Cook carrots on stove or in microwave until half-cooked (you want them to stay firm).

Put frozen peas into the bowl you will be mixing the pasta salad into. Once pasta has cooked, stir hot pasta and frozen peas together. This will soften and thaw the peas. Don't cook them!! They will turn mushy!!!

Chop remaining ingredients and stir into bowl. Add 1/4 cup (4 tablespoons) Lite Slaw Dressing. Add more dressing to taste, but beware- it is 90 calories per 2 tbsp!!!

Serves about 12 - 1 cup servings.
