Whistle While You Wok

Ingredients

    8 oz whole wheat rotini pasta

    Sauce:
    1/2 cup orange juice
    1/3 cup hoisin sauce
    2 tbsp soy sauce
    1 1/2 tbsp cornstarch
    1 tbsp grated gingerroot
    1 tbsp sesame oil
    1 tsp minced garlic
    1/4 tsp crushed red pepper flakes

    4 large boneless skinless chicken breasts, cut into cubes or strips
    2 cups broccoli florets
    2 cups halved medium sized mushrooms
    1 large red pepper, cut into strips
    1/2 cup frozen green peas
    1/3 cup green onions, coarsely chopped
    10 fresh basil leaves, coarsely chopped

Directions

Cook pasta and set aside

Whisk together all sauce ingredients and set aside

Cook chicken in a large wok until chicken is light browned on the outside but still pink inside. Add broccoli, mushrooms, and red pepper. Cook and stir for about 6 minutes. Add peas and onions. Cook 1 more minute. Add sauce and basil. Cook until sauce is bubbly and thick (about 1 more minute) add pasta and cook 1 more minute

  • Originally from the cookbook Eat, Shrink and Be Merry. Very good! I doubled the red pepper, ginger and garlic for extra flavour, and it worked well. I also used dried basil instead of fresh. I highly recommend this recipe for lots of veggie content along with excellent flavour. - 1/17/11
