Cream of mushroom soup. * quick and easy

Introduction

Delicious soup for fall weather, one of my favorites! Delicious soup for fall weather, one of my favorites!
Number of Servings: 4

Ingredients

    Butter, unsalted, 1 tbsp (optional for flavor - in the nutrition data)
    Bay Leaf, 1 leaf
    Pepper, white, 0.25 tsp
    Thyme, fresh, 1 tsp or a pinch of dry ( dry is stronger)
    Olive Oil, 1 1tsp ( for sauteeing onion and garlic )
    Crimini Mushrooms, fresh, 18 large
    Onions, raw, 0.50 cup, chopped
    Water, tap, 2 cup (8 fl oz)
    Herb Ox sodium free instant broth with seasoning, 2 serving
    Salt to taste
    (You can also use 2 cups of chicken broth instead.)
    Flour, white, 2 tbsp.
    Garlic, 1 clove , pressed
    *Horizon Organic Fat Free Milk, 1 cup
    Fat free half and half, 1 cup

    Garnish options:

    Parmesan or parmesano reggiano cheese 1/2 tb per bowl of soup.

    Hornell bacon bits

    Fried Onions from Trader Joe's

    or Home made fried shallots.

Directions

Chop all the stems and caps of cleaned mushrooms. Heat olive oil, brown garlic, onions. Add mushroom stems and caps, cook till all the moisture has evaporated. Mix flour with 1/4 cup of water till well blended . Add 2-3 cups of water ( as needed) and herb ox chicken broth mix, bay leaf, thyme and bring to a boil. Add milk and bring to a boil again. Stir in half and half and bring to a boil once again. Serve hot with garlic bread or Onion Nan.

Serves 4 a full bowl of soup Tastes yummy individually topped with 1/2 tbsp of parmesano reggiano cheese and Fried onions or shallots or Hornell bacon bits.
