Laura's Broccoli Soup

Introduction

A simple to make broccoli soup. Could easily substitute asparagus or any other veggie in the cabbage family. A simple to make broccoli soup. Could easily substitute asparagus or any other veggie in the cabbage family.
Number of Servings: 8

Ingredients

    Broccoli, fresh, 1 bunch
    Milk, nonfat, 2.5 cup
    Butter, unsalted, 2 tbsp
    Flour, all purpose, .25 cup
    Campbellā€™s Chicken Broth (fat free/low sodium), 1 can plus 1 cup water
    Onions, raw, 1 small finely chopped

Directions

Steam the broccoli florets and finely chopped stalks. Reserve the liquid.
Saute the onion in butter, add flour and cook to make a roux. Very slowly add the milk, broth and vegetable water. Season to taste with basil, oregano and pepper. Add broccoli and boil 5 min. Let stand 5-10 min to thicken before serving.
