Vegetarian chickpea burgers

Number of Servings: 4

Ingredients

    One 15 ounce can chickpeas, rinsed and drained
    One 4 ounce can diced green chiles
    2/3 cup packed flat leaf parsley
    2/3 cup bread crumbs
    salt and pepper
    1 large egg, lightly beaten
    2 tbsp canola oil

Directions

In a food processor, pulse the chickpeas, green chiles, and parsley until finely chopped. Transfer mixture to a medium bowl and stir in bread crumbs, salt and pepper. Stir in egg and form the mixture into 4 patties about 2/3 inch thick.

In a large skillet or grill pan, heat oil over medium low heat. Cook the burgers for 4 minutes, then flip and cook for 3 minutes more. Top the patties with cheese if desired for the last minute of cooking. Serve the burgers on hamburger buns with desired condiments and toppings.
