Zucchini Casserole

Introduction

Tastes like turkey dinner minus the turkey so we sometimes have it as a main dish instead of as a side. Tastes like turkey dinner minus the turkey so we sometimes have it as a main dish instead of as a side.

Ingredients

    3 large zucchini, cut into cubes, unpeeled
    1 carrot, grated
    1 onion, cut fine
    1 can 99% fat free cream of mushroom soup
    8 oz. reduced fat sour cream
    2 cups cubed bread stuffing mix
    1/2 cup fat free chicken broth

Directions

Mix stuffing with chicken broth. Add 1/2 of the stuffing to first 5 ingredients, put in 1 1/2 quart casserole dish, then add rest of stuffing mixture to top. Bake at 350 degrees for 25-30 minutes.
