Introduction

Number of Servings: 8

Ingredients

    2 avocados, peeled and seeded
    1 tomato, large, diced
    1 cup cottage cheese, 2% milk fat (drain excess liquid)
    .5 cup chopped scallions
    .5 cup chopped cilantro, fresh

Directions

1. Mash the avocados in a medium-large bowl
2. Fold in tomatoes, cottage cheese, scallions, and cilantro.
3. Enjoy!!!

This recipe makes about 8 half cup servings.

**This recipe does not call for salt or pepper; the dip is flavorful enough without it. I suggest tasting the dip before adding any other seasonings, and then season to taste, if necessary.

**I only listed .5 cup cilantro in the ingredient list. However, I actually use a full cup of chopped cilantro simply because I LOVE cilantro. I was trying to make the recipe more people-friendly. If you like cilantro as much as I do, try it with a full cup. MMMMMMM,......good stuff!!!
