Introduction

I borrowed the original recipe from a fellow Spark member, with a couple alterations. Like for instance, substituted pumpkin for the oil. I borrowed the original recipe from a fellow Spark member, with a couple alterations. Like for instance, substituted pumpkin for the oil.
Number of Servings: 12

Ingredients

    *Whole Wheat Flour, 2 cup
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, .5 tsp
    Pumpkin, cooked, .33 cup, mashed (I prefer canned)
    Maple Syrup, .33 cup
    Cinnamon, ground, 1 tbsp
    Water, tap, 1.5 cup

Tips

Besides being low fat, this is low calorie, and I believe it qualifies as a vegan recipe as well.


Directions

Mix everything together in mixing bowl.
Spray muffin tin with Pam, or line with muffin paper liners.
Bake at 375 for 20 min.
Makes 12 nice size muffins.
