PJ's Smashed Potato Salad

Introduction

Lower fat, lower carb version of potato salad. Skim milk may be substituted for the whole milk. Lower fat, lower carb version of potato salad. Skim milk may be substituted for the whole milk.
Number of Servings: 10

Ingredients

    10 small to medium red potatoes
    2 Tbsp butter
    1/2 cup whole milk
    1/2 cup chicken broth or stock
    2 Tbsp Kraft mayo with olive oil
    2 tsp brown mustard
    3 tsp yellow mustard
    3 boiled eggs, chopped
    1 tsp salt
    1/2 tsp pepper

Directions

Boil potatoes in skins until tender. Drain off water and add butter, milk, broth, salt and pepper. Whip with mixer. Next add mayo, mustard and eggs. Mix together and serve.
Serves: 10 1 cup servings
