Introduction

Miniature Italian waffle cookies Miniature Italian waffle cookies
Number of Servings: 24

Ingredients

    3 Eggs
    1/2 c. butter, margarine or blend (melted)
    1T Vanilla
    3/4 c. granulated sugar
    1 3/4 flour
    2 t. baking powder

    Powdered Sugar
    Water

Directions

Whisk together eggs, vanilla and sugar. Slowly whisk in melted butter that has cooled slightly.

Sift together flour and baking powder. Slowly add to wet ingredients. Mix well. Add small amounts of water if necessary to bring mixture to a ribbon-like consistency when dropped by a spoon. Bake on pizelle iron according to machine instructions. Remove from iron to cooling rack and immediately sprinkle with sifted powdered sugar.

Keep extra water on hand if needed to thin out batter. If to thin...add extra flour.

Alternate methods: replace 1/2 vanilla with almond extract, or add anise seed to original recipe.
