Introduction

Number of Servings: 2

Ingredients

    1 plantain, yellow with some black
    oil to fry it

    6 oz. chicken breast strips
    juice of 1/2 a lemon
    2 Tb. cilantro stems and leave minced
    1/4 ts. ground cumin
    1 clove garlic minced
    2 ts. oil

    4 cups salad greens
    1/2 a small sweet pepper sliced
    1 small tomato diced
    1/4 cup of banana pepper rings
    1/2 an avocado sliced
    1/4 cup of crumbled queso blanco

    1/2 lemon
    1/4c cilantro leaves
    jalapenos to taste
    salt to taste
    1 clove garlic minced
    1 slice queso blanco
    water as needed

Directions

Make marinade of juice of 1/2 a lemon, 2 Tb. minced cilantro, 1/4 ts. ground cumin, 1 clove minces garlic and 2 ts. oil, add pinch of salt and chicken 1/2-2 hrs. before you eat. Broil on foil about 3 minutes per side or browned. Shred meat.

Blend cilantro leaves, rest of lemon, pinch of salt, jalapenos, and 1 garlic clove with enough water to make a sauce, add 1 slice of queso blanco, set aside .

Split plantains lengthwise and fry till golden brown on each side. Drain on paper. Or just microwave.

To serve- put plantain on plate and top with salad, avocados, banana peppers, and cheese. Top with shredded chicken and cilantro sauce.
