3/4 cup Hellmans Light Mayonnaise 1/4 cup chopped pimento, drained (1 2oz jar) 1/4 cup chopped onion 1/4 cup sweet pickle relish 1 teaspoon prepared mustard 1/8 teaspoon black pepper 3 cups cold cooked macaroni, rinsed and drained sugar substitute to equal 1 T sugar
In a large bowl, combine mayonnaise, pimento, onion, pickle relish. sugar substitute, mustard, and black pepper. Add macaroni. Mix well to combine. Cover and refridgerate for at least 30 min. Gently stir again just before serving. 128 cal, 0 gm fat, 4 gm protein, 28 gm Carbohydrates, 432 mg Sodium, 10 mg Calcium, 1 gm fiber
I do a less lo-cal version of this. I add cubed cheese, cubed ham or chicken, and some peas. No need to add a lot. Even a little adds color and extra taste. Keep the cubes small. It adds protein and makes it a meal rather than a side dish. At a family event I had dishes of these to add.
I am making this with Barilla whole wheat Rotini, and my own homemade extra virgin olive oil mayo, and taking it to my cousin's house for a dinner there. Thanks for sharing this lovely recipe. :)
