Ingredients

    3 cups uncooked elbow macaroni
    butter-flavored cooking spray
    4 tablespoons all-purpose flour
    1/2 teaspoon salt
    1-1/2 cup nonfat milk
    8 ounces 75% light shredded light cheddar cheese
    5 ounces light shredded swiss cheese

Directions

Cook the macaroni according to package directions.

Preheat the oven to 375 degrees. Lightly mist an 3 qt casserole dish with spray.

Add the flour and salt to a medium bowl. Slowly whisk in enough milk to form a paste. Then continue adding the remaining milk, whisking as you do, making sure to remove any lumps.

Transfer the milk mixture to a medium, non-stick saucepan and place the pan over medium heat. When the milk is warm, add the cheese and stir the mixture with a wooden spoon until the cheese is completely melted and incorporated and the mixture thickens slightly. Stir in the macaroni, the transfer the mixture to the prepared dish.

Bake the macaroni for 15-18 minutes. Remove it from the oven and let it stand for 5 minutes. Serve immediately.
