2 pounds carrots, chopped
1 medium onion, chopped
1.54 tsp low sodium boullion powder
.5 cup non fat plain yogurt
salt and pepper to taste
3 wedges laughing cow light
about a quart of water
Chop all veggies, add everything to a big pot except the yogurt and laughing cow. Cook for about 45 minutes.
Toss in the yogurt and laughing cow and blend with an immersion blender. Salt and pepper if necessary.
Add dill, or parsley, or coriander to change a bit.
