Plaice with Beaujolais Sauce

Introduction

Ingredients

    4 plaice fillets
    175 ml Beaujolais
    50 ml Port
    300 ml fish stock
    85 g butter, unsalted
    1/2 tsp caster sugar

Directions

Preheat grill to high.

1. Place plaice on a grill pan.
2. Put all ingredients except butter into a large pan.
3. Boil rapidly until reduced by 3/4.
4. Dice butter.
5. Slowly add butter to sauce, whisking all the time.
6.Serve.
