Asparagus and Pasta

Introduction

A light, healthy pasta dish incorporating fresh asparagus. A light, healthy pasta dish incorporating fresh asparagus.
Number of Servings: 2

Ingredients

    1 tbsp olive oil
    2 cloves garlic, minced
    1 medium red onion, sliced
    Approx 20 asparagus spears, cleaned and cut into 1 inch peices
    1 large tomato, diced
    salt and pepper
    approx 1 cup cooked whole wheat pasta

Directions

Heat up the oil in a large skillet, med heat. Add garlic and cook for a minute, then add onions and saute for 2 minutes. Add asparagus, dash of salt and pepper to taste, stir and cook for an additional minute. Turn heat down to low and cook approx 7 to 8 minutes covered. Uncover and add tomatoes, cook for 1 minute and add cooked pasta. Stir to coat. You can cook the whole dish for a minute or two longer if desired.

For a little more variety, top with fresh basil.
