6 Medium potatoes 1/4 C. Country Crock light butter 1 C. evaporated milk 1/2 C. grated cheddar cheese 1/2 C. sour cream 1 bunch green onions, sliced
Boil 6 medium potatoes in skins, cook, slice thin and put in bowl. Melt 1/4 C. butter & pour over potatoes. Mix remaining ingridients together. Mix with potatoes, put in dipper pan and sprinkle crushed Ritz crackers over the top. Dot with butter. Bake 30 minutes at 350 degrees. Serves 12.
