Ministrone Soup (homemade)



Introduction

Ingredients

    Carrots, zucchini, potoes, green beans, celery, spinich, chicken, onion, garlic, olive oil, dried bean mix, spagetti sauce

Directions

Soak Beans overnight, or at least 8 hours. Or place beans in pot with 3 quarts of water, bring to a boil , lower heat slightly and cook for 1 hour stirring occasionaly to prevent sticking. Check on water level, replacing water as needed due to cooking down of liquid. After 60 min, add other ingredients and simmer for 45-60 minutes, till all vegetables are tender. Makes around 12-15 servings, depending upon amount of additional water added during cooking process. Serving sizes are approx. 12-13 oz . I measured them out on a dietary kitchen scale for accuracy.
