Coconut Crusted Mahi Mahi

12 oz. mahi mahi
1/2 cup shredded coconut, sweetened
1 egg, lightly beaten
1/4 cup whole wheat flour
Spray baking sheet with cooking spray.
Mix flour, salt, pepper and cayenne. Put on a plate for dipping fish.
Place beaten egg in bowl for dipping.
Place coconut on plate for dipping.
Dredge fish in flour mixture to cover. Then dip in egg. Then dip in coconut, pressing down to coat.
Place on baking sheet. Bake about 15 minutes, until fish flakes easily and coconut is golden.
