Cashew Coconut Pudding with Orange Segments


Number of Servings: 8


    2 cups cashews
    1 ½ cups fresh orange juice
    ½ cup shredded dried coconut or fresh coconut
    2 teaspoons organic vanilla
    1 cup orange sections


Blend the cashews and the orange juice until smooth. Add the coconut. Blend until smooth.

Serve immediately or refrigerate until ready to serve. Will keep for three to four days in the fridge.

Garnish with orange segments and serve
