6 potatoes, peeled 2 leeks, coarsley chopped 2 onions, chopped 1 carrot, peeled and chopped 1 stalk celery, sliced 1 Tbsp parsley flakes 1/3 cu[ butter 5 cup water 4 chicken bouillon cubes 1 Tbsp salt Pepper to taste 1 1/2 cup half and half chopped chives
Cut potatoes into bite-sized pieces. Combine with vegetables, parsley flakes, butter, water, bouillon cubes and seasonings in Crock Pot; mix well. Cook on Low for 9-11 hours or on High for 2-3 hours. Stir in half and half. Cook for 1 hour longer. Mash vegetables with potato masher if desired. Ladle into soup bowls. Garnigh with chopped chives.
