Crock Pot White Chicken Chili

Submitted by: DAHNEESER

Introduction

Hint: To bring the sodium content down, which isn't reflected in the nutritional info here, I drain and rinse all of the beans. Using 4 cans of beans, at 440 mg. of sodium per serving (3.5 servings per can), I would assume that the sodium content in this recipe is considerably less after draining and rinsing the beans. Ingredients

    4 cans (15 oz.) S&W White Beans
1 can (15 oz.) Del Monte Petite Cut Diced Tomatoes
1 can (4 oz.) Ortega Fire Roasted Green Chiles, Diced
2 pkgs. McCormick White Chicken Chili Seasoning
    3 cups Water
2 Large Chicken Breasts, Boneless/Skinless (8 oz. ea.)

Directions

Drain and rinse beans. Add beans, tomatoes, chiles, both packages of seasoning mix and 3 cups water to crock pot. Stir ingredients to mix well.

Lay both chicken breasts on top of bean and seasoning mixture. Put lid on crock pot.

Turn on to high setting. Cook 3-4 hours, or 6-8 hours on low setting.

Before serving, remove chicken breasts from crock pot, and shred the meat. Add the chicken back in the crock pot, stir and serve.

This was a great recipe. Very flavorful, but it just explodes if you add a bag of frozen sweet corn about 30 minutes before it's done. It made me wish I had a bigger crock pot, and could triple the recipe so I had more to freeze for later. - 9/22/13

  • Loved this recipe!! Instead of 4 cans of white beans I only added 3 and added 3 skinless chicken breast instead of 2. I decided to shred the chicken once it was fully cooked and let it simmer on low for a half hour. I also added sweet corn from the recommendation below. It was amazing! - 8/19/14
