Crock Pot Cheesey Ham & Potato Soup

Introduction

This is a great lower calorie version of a favorite soup. Easy to toss it all in the crock and come home to a wonderful aroma and a delicious dinner....serve with a leafy green salad. Enjoy! Ingredients

    2 C diced turkey ham or two smoked turkey drumsticks.
    1 C diced raw celery
    1 C diced yellow onion
    4 C.peeled and diced red potatoes
    1.5 t. fresh ground black pepper
    1 t. sea salt
    3 garlic cloves, minced or pressed
    4 T. Fresh Thyme or 2 t. dried
    4 C. Swanson 99% fat free chicken broth
    12 oz. Cubed Velveeta Light 2% cheese
    2 C filtered or tap water
    1/4 C white flour

Directions

Add all ingredients (except one of the cups of water, the flour, and the Velveeta cheese) to the crockpot. Cover and cook on low for 8 hrs, or high for 4 hrs. Then if you used smoked turkey drums, remove the legs and cool slightly, remove the skin and bones, and dice the meat and return to pot. Then add the cubed cheese and stir well. and bring up to high if it was on low. Blend the last cup of water with the flour, removing all lumps. Add to pot as well, and cover and simmer for 15-20 min so soup will thicken. This will also work with a ham bone with some reserved ham on it. Makes approx. 8 servings at 1.5 cups each.
