Leeky Shepherd's Pie

Ingredients

    For the filling:

    450g minced lamb
    1 tbsp olive oil
    2 medium onions, diced
    75g carrot, peeled and chopped small
    75g peas
    200g baked beans
    1 tsp dried parsley
    500 ml chicken stock

    For the topping:

    1 medium-sized leek, cleaned and sliced
    800 g ready-made mashed potato

Directions

Pre-heat oven to 200 C / 400 F.

1. Using a large frying pan, gently heat the oil.
2. Fry the onions until the edges are browning - about 5 mins.
3. Add the carrot and peas. Cook for about 5 mins.
4. Remove the vegetables and keep them to one side.
5. Fry the minced lamb in the pan until browned.
6. Add the vegetables back to the pan.
7. Add the parsley.
8. Gradually add the stock.
9. Turn the heat down, cover the pan, and let it cook for about 15 minutes. Add the beans, and cook for another 15 minutes.
10. When the meat is ready, spoon it into your baking dish.
11. Press flat.
12. Spoon the ready-made mashed potatoes on top.
13. Sprinkle the leeks on top.
14. Bake for about 25 minutes, until the top is golden and crusted.
