Chewy Brownies

Introduction

Ingredients

    8 Tbs unsalted butter; more for the pan
    4 oz. unsweetened chocolate
    1-1/2 cups sugar
    Scant 1/4 tsp salt
    2 tsp vanilla extract
    2 large eggs, at room temperature
    1 cup flour
    2 Tbs. natural cocoa (not Dutch-processed)

Directions

Melt chocolate with butter in a double broiler. Remove from heat and stir in sugar salt and vanilla. Add eggs one at a time, beating after each. Pour into prepared (parchment lined and buttered) 8-in square pan. Bake at 350F for 35-45 minutes. Makes sixteen 2-in squares.
