1lbs boneless skinless chicken breasts
1c hot salsa
1/4 c peanut butter
1 TBS soy sauce or fish sauce
2 TBS lime juice
1 tsp freshly grated ginger
1c Brown Jasmine Rice
Chopped peanuts for garnish
Cilantro for garnish
Serve with brown rice or over whole-wheat soba noodles.
** It only took about five hours in my crockpot. The meat was shredded.
