3 lb bag of frozen boneless chicken breasts
1 packet taco seasoning
3 cups thick & chunky salsa (I use the Walmart brand of salsa that has black beans & corn in it)
1 bag (24 oz) Trader Joe's frozen 3 Bell Pepper Blend
Sprinkle of garlic powder
Cook in crock pot on low for 8 hours.
When finished, you can eat as is, or shred it for chicken tacos, chicken burritos, taco salad, nachos, top a baked potato, etc. This makes quite a bit, so you'll have leftovers for another day.
Note: I put my frozen chicken breasts in the crock pot. I've been doing this for years, and I haven't gotten sick or killed anyone yet. ;) If you are nervous about food safety, simply thaw your chicken first, and decrease the cooking time accordingly.
