Sweet & Sour Tofu Stir-Fry with Edamame




Number of Servings: 4

Ingredients

    14oz pkg drained firm tofu
    2 tsp. oil, separated
    1 11.5oz jar Kikkoman Sweet & Sour Sauce
    16oz pkg stir-fry veggies with edamame
    2 cups cooked brown rice

Directions

Drain and press tofu for 20-30 minutes.
Cut tofu into dice-sized pieces.
Fry tofu in 1 tsp. oil until lightly browned.
Add bag of stir-fry veggies and 1 tsp. oil, saute until cooked through.
Add jar of sweet & sour sauce and saute for 5 minutes.
Top rice with stir-fry and enjoy!

  • Very good recipe. I used extra virgin olive oil, and substituted the rice with quinoa for a lower calorie and healthier meal though...very tasty! - 4/16/09
