Chipotle Crock Pot Chicken

Introduction

A southwestern dish I whipped up with items I just had around the kitchen! Watch out; it's spicy! A southwestern dish I whipped up with items I just had around the kitchen! Watch out; it's spicy!
Number of Servings: 10

Ingredients

    2 chicken breast halves
    1 can kidney beans or black beans
    1 can Campbell's Healthy Request cream soup (celery, cheddar, chicken, mushroom---whatever you have! I used cream of celery)
    1 cup corn
    1/2 cup diced green pepper (optional---I happened to have some in the freezer!)
    1 cup salsa
    1 tsp chipotle chili powder
    1.5 tsp cinnamon
    1 tsp cocoa
    1/8 tsp white pepper
    1/4 tsp garlic salt

Directions

Layer chicken on bottom of crock pot. Then add Salsa, Soup, Kidney beans, Spices, Corn (and other veggies, if using). Stir it up just a little bit. Cook on high for 2-3 hours (or on low for 5-6). Shred chicken and serve over rice, with tortillas, or with corn chips (none of these are included in nutritional info). Makes approximately 10 servings (1/2 cup).
