Shrimp Pasta

Introduction

I kind of made this up as I went and will be making variations. Turned out okay but not as creamy as I had hoped. I kind of made this up as I went and will be making variations. Turned out okay but not as creamy as I had hoped.
Number of Servings: 8

Ingredients

    1 pound box of Radiatore Pasta
    15 oz skim ricotta cheese
    1/2 cup 2% milk
    3/4 c diced onions
    2 cups (120g) sliced fresh mushrooms
    Shrimp, frozen cooked cocktail shrimp, 120g
    14.5 oz can No Salt Added Diced Tomatoes
    1/2 tsp garlic powder
    1/2 tsp ground oregano
    1/4 tsp ground basil
    1/4 tsp garlic salt
    1/2 Tbsp veg oil spread or margarine

Directions

*Cook pasta according to directions.
*In a saucepan over medium heat, whisk ricotta cheese, milk, garlic salt, oregano and basil together and turn down to low. Stir occasionally until pasta is cooked.
*In a saute or frying pan heat margarine, add onions, mushrooms, diced tomatoes and garlic salt. Stir over medium heat occasionally until onions are tender.
*Thaw shrimp under cool water while everything else is being cooked.
*Once pasta is done, add ricotta mixture and toss until all pasta is coated.
*Add the shrimp to the veggie mix and heat for only a couple of minutes to heat the shrimp. Over heating will shrink the shrimp.
*Add this mixture to the pasta, toss till well mixed and enjoy.
Depending on the size of the serving, you could serve 10 or 12 with a couple of veggies on the side. Divided into 8 portions they are quite large.
