Pineapple Quickbread

A recipe developed years ago while doing WW. I shared with many and it became a favorite for the entire community. Very good for breakfast. A recipe developed years ago while doing WW. Ingredients

1/2 cup crushed pineapple, undrained
1/3 cup non-fat dry milk
1 egg
1 oz. dry cornmeal (2 tablespoons)
2 tablespoons flour
2 teaspoons sugar
1 teaspoon baking powder
Directions
Preheat oven to 350 degrees.
Combine all ingredients in blender container and process until mixed but not completely smooth.
Line six-cup regular or 12-cup mini-size muffin pan with paper liners and divide mixture evenly. (Or spray with cooking spray.)
Bake for about 15 minutes or until a toothpick inserted comes out dry.
This makes ONE serving.
