Squash 'n' Sausage Pasta sauce

Introduction

This is a very hearty sauce: feel free to add more vegetables or substitute what's growing in your own garden this summer! This is a very hearty sauce: feel free to add more vegetables or substitute what's growing in your own garden this summer!

Ingredients

    2 c. pureed tomatoes
    1 sliced carrot
    1 grated stalk of broccoli
    1 grated yellow summer squash (small)
    1/4 tsp. pepper
    1/4 tsp. dried thyme
    3 tbsp. olive oil
    12 oz. hillshire farms smoked turkey sausage, sliced
    1/2 onion, chopped
    2 cloves garlic, pressed or minced
    2 chopped summer squash
    1 chopped zucchini

Directions

1. combine pureed tomatoes, sliced carrots, grated broccoli and squash, pepper, and thyme in a saucepan and let simmer over medium-low heat for 20 minutes.
2. In the meantime: heat olive oil over medium heat in a large pan. Add onions and cook until fragrant, then add garlic. Cook for 1 minute. Add sliced turkey sausage. Cook until sausage begins to get seared on its edges and lose some of its juices into the pan.
3. Add chopped squash to the pan, along with 1/2 cup of water. Add the tomato mixture, which by this time should be softened up and thickened. Allow pan to simmer for 5-10 minutes until flavors meld a bit.
4. Serve over pasta of your choice. I like it over whole wheat spaghetti. Makes 8 servings.
