Pepper Steak
Submitted by: MRSWESTYIntroduction
This recipe came from the Light & Fluffy noodle package. It's delicious and tender when prepared according to the directions. I always thought it was healthy, but now I KNOW it is. I often substitute broth for the water and bouillon. Also, don't be intimidated by the long cooking time; an hour of it is non-active. If your meat is cut larger, allow a bit longer for it to get tender. Also, this tastes great if you omit the can of tomatoes too! This recipe came from the Light & Fluffy noodle package. Ingredients
-
1 Pound boneless beef round tips
2 T vegetable oil
1/2 tsp salt
1 Cup sliced onion
1 clove garlic, minced
2 beef bouillon cubes
2 cups boiling water
2 T worcestershire sauce
2 cups green pepper strips
2 T cornstarch
1/4 cup water
1 can (14 1/2 oz) tomatoes
4 cups egg noodles
Directions
Trim fat from meat; cut into 1/8-inch strips or cubes. Brown meat in oil in large skillet; season with salt. Add onion and garlic; cook and stir until onion is tender. Dissolve bouillon cubes in 2 cups boiling water; add with worcestershire sauce to meat. Cover; simmer 1 hour or until meat is tender. Add green pepper; cover and simmer 5 minutes longer. Combine cornstarch and 1/4 cup water; gradually stir into meat mixture. Cook, stirring constantly, until sauce thickens, and begins to boil. Add tomatoes; heat through. Cook noodles according to package directions. Serve pepper steak over the noodles. Makes 4 generous servings.
