Jen's Bruchetta Chicken

Submitted by: MRSWESTY

Introduction

This was adapted from several recipes I found here - with a few minor changes. This was SO easy to make and DELICIOUS. My version is a little spicy. It's surprisingly filling! I like to use the Rotel cilantro and lime variety when I can find it. This was adapted from several recipes I found here - with a few minor changes. This was SO easy to make and DELICIOUS. Since my kids don't care for stuffing, I cooked some brown whole grain rice and placed that on the bottom with the chicken, Rotel and seasonings over the rice. I omitted the water since the Rotel is undrained. I have made it twice now and they like it. - 4/27/09

I do not like Stovetop Stuffing. Yuck! Have you ever read the ingredient list? The taste is repulsive. (And I am a homemade stuffing lover). I do like Rotel cilantro and lime but too bad processed foods have so much sodium. Whole grain rice is so much healthier as mentioned by ConnieK1960. - 6/7/09
