    2 c rice noodles
    2 T rice vinegar
    dash of salt
    1/2 c grated carrots
    1/2 c grated cucumber
    1/3 c grated red cabbage
    8 rice paper wraps
    1 green onion
    8 basil leaves

Directions

Roll as salad rolls and serve with favorite dipping sauce.
